Tuna Melt

There are many ways to make a tuna melt so there is no right or wrong way. 

My way has been tweaked over the years but the basic principles of it remain the same.

They are:
- High grade tinned tuna (dolphin friendly): You can really pay next to nothing for generic tuna but treat yourself to the higher quality type
- Finely chopped red onion: this compliments the tuna perfectly in my opinion
- Fresh coriander: I like to use some fresh coriander with the tuna & red onion
- Sauce: I use a mayo based sauce in the weighting of:
4 times mayonnaise
1 time each secondary flavours
½ time tomato ketchup
Black Pepper
- Finely chopped spring onion: just before adding the cheese on top I like to put some finely chopped spring onion (middle third). The crispness from the spring onion is delicious
- Grated cheese: melted cheese on top
- Bread: pre-baked baguette & cook with the tuna in the oven before adding the cheese at the end

Now that you know the basics here is how you would go about making a Tuna Melt:

Ingredients
1 tin of Tuna in water
1 small red onion
Fresh coriander
1 Spring onion (middle green section)
Grated cheese
2 prebaked baguettes

Mayonnaise
Seeded Mustard
Sweet Chilli Sauce
Tomato Ketchup
Black Pepper

Cooking utensils
Chopping board
Sharp knife
2 bowls
Aluminum foil

Preparation
- Drain your tuna
- Finely chop your red onion, coriander and spring onion
- Pre-heat oven to 200C
  
1. Bread
- Similar to the Mozzarella Garlic Bread I like to to cut the bottom off the bread and make a trench in the middle of the bread by cutting down the sides and scooping out the bread 

2. Sauce
Use a Mayonnaise sauce. I like to weight it in the following way:
4 times Mayonnaise
1 time each secondary flavour - seeded mustard & sweet chilli sauce
½ time tomato ketchup
Black Pepper 

3. Tuna mix

- Mix together the drained tuna, chopped red onion & coriander
- Season with salt and pepper to your own taste

Combining
- When combining your sauce with your tuna do it in a gradual manner - you do not want the tuna mixture too be too saucy

- Place your tuna mixture in the trench you have made in the bread

- Place in a preheated oven 200C for 4 minutes (let sit on tin foil to capture the melted cheese)

- After 4 minutes remove bread from oven and sprinkle first your spring onion and then your cheese over. 

- Return to oven for final 4 minutes and serve!
